These delicious Corn Fritters make a great snack or appetizer, served either hot or cold.
Ingredients
- 1 cup yellow pea flour (also known as chickpea or besan flour)
- 1/2 tsp salt
- 2 tsp baking powder
- 1 tin creamed corn
- 1 cup water (for mixing)
- Oil for frying
Method
- In a large mixing bowl, combine the creamed corn.
- Sift the yellow pea flour, baking powder, and salt over the creamed corn.
- Gradually add water and mix with a fork to create a stiff batter.
- Heat oil in a frying pan over medium heat. Once hot, drop spoonfuls of batter into the pan.
- Cook until bubbles form on top and the bottom is brown, then flip to cook the other side.
- Serve the corn fritters hot, or enjoy them cold.
