Enjoy Loluama’s Self-Saucing Chocolate Pudding warm, with its deliciously gooey sauce and tender sponge!
Ingredients
- 1 cup self-raising flour
- 3/4 cup white sugar (use less if desired)
- Pinch of salt
- 1/3 cup cocoa, divided
- 1/2 cup milk
- 60g margarine, melted
- 1 tsp vanilla
- 1/2 cup brown sugar
- 1 cup boiling water
- 3 tsp instant coffee powder (optional)
Method
- Preheat the oven to 180°C (356°F).
- In a large mixing bowl, sift together the flour, white sugar, salt, and 2 tablespoons of cocoa.
- Add the milk, melted margarine, and vanilla to the dry ingredients. Mix well.
- Pour the mixture into a greased baking dish.
- In a separate mug, combine the brown sugar and the remaining cocoa. Mix with a fork, breaking up any lumps, then sprinkle the mixture evenly over the pudding.
- If using instant coffee powder, dissolve it in the boiling water.
- Carefully spoon the boiling water (or coffee mixture) over the pudding to cover the top.
- Bake for 35-45 minutes, or until the sponge is cooked and the sauce is bubbly.
