Oatmeal Raisin Cookies

These oatmeal raisin cookies are perfect for a snack or dessert. If you’re making a double batch for university, simply double the ingredients and follow the same instructions. Enjoy!


Ingredients

  • 1/3 cup soy milk
  • 2/3 cup brown sugar
  • 1/3 cup oil
  • 1 tsp vanilla essence
  • 3/4 cup flour
  • 1/2 tsp cinnamon
  • 1/8 tsp ground nutmeg
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cup quick-oats
  • ½ – ¾ cup raisins

Method

  1. Preheat your oven to 185°C (365°F) and line a baking tray with baking paper.
  2. In a large bowl, mix together soy milk, brown sugar, and oil using a fork for 2 minutes.
  3. Add vanilla essence to the mixture and stir to combine.
  4. Sift flour, cinnamon, ground nutmeg, baking soda, and salt into the wet mixture. Mix until combined.
  5. Fold in the quick-oats and raisins until well distributed throughout the dough.
  6. Drop balls of dough onto the prepared baking tray, spacing them about 2 inches apart. Flatten the tops slightly, and press any exposed raisins into the dough to avoid burning.
  7. Bake for 10-12 minutes, or until the edges are golden brown.
