These oatmeal raisin cookies are perfect for a snack or dessert. If you’re making a double batch for university, simply double the ingredients and follow the same instructions. Enjoy!
Ingredients
- 1/3 cup soy milk
- 2/3 cup brown sugar
- 1/3 cup oil
- 1 tsp vanilla essence
- 3/4 cup flour
- 1/2 tsp cinnamon
- 1/8 tsp ground nutmeg
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 1/2 cup quick-oats
- ½ – ¾ cup raisins
Method
- Preheat your oven to 185°C (365°F) and line a baking tray with baking paper.
- In a large bowl, mix together soy milk, brown sugar, and oil using a fork for 2 minutes.
- Add vanilla essence to the mixture and stir to combine.
- Sift flour, cinnamon, ground nutmeg, baking soda, and salt into the wet mixture. Mix until combined.
- Fold in the quick-oats and raisins until well distributed throughout the dough.
- Drop balls of dough onto the prepared baking tray, spacing them about 2 inches apart. Flatten the tops slightly, and press any exposed raisins into the dough to avoid burning.
- Bake for 10-12 minutes, or until the edges are golden brown.
