These Puffy Pillow Pancakes are delicious and satisfying, making for a perfect breakfast or brunch treat.
Ingredients
- 1 1/2 cup (225g) white flour
- 3 1/2 tsp baking powder
- 2 tbsp sugar
- 1 tsp salt
- 1 cup plant milk
- 2 tsp apple cider vinegar
- 1 tbsp ground linseeds or flaxseeds
- 1/2 cup water
- 3 tbsp oil
- 1/2 tsp vanilla essence
Method
- In a large bowl, sift together the flour, baking powder, salt, and sugar. Create a well in the center.
- In a measuring cup, combine the plant milk, apple cider vinegar, and ground flaxseeds. Beat vigorously with a fork for about a minute until foamy.
- Pour the milk mixture into the well of the dry ingredients. Add the water, oil, and vanilla essence, then mix with a fork to create a thick batter.
- Preheat a pan over medium-low heat and lightly coat it with oil.
- Pour the batter into the pan, cooking for about 4 minutes until the pancakes are puffy. Flip them and cook for another 3 minutes, adding more oil as needed. The pancakes should be about an inch thick and golden brown.
- Serve immediately or enjoy cold later. To reheat, place the pancakes on a baking sheet covered with tin foil in a 150°C (300°F) oven for about 5 minutes.
