These delicious Sausage Rolls can be enjoyed hot or cold, making them a versatile snack or appetizer.
Ingredients
- 1 small block (300g) tofu
- 1/2 cup crushed walnuts (optional)
- 2 tbsp soy sauce
- 1/2 cup breadcrumbs
- 1 1/2 cups rolled oats
- 1 medium onion, finely chopped
- 1 tsp dry vegetable stock powder
- 1 tsp brewer’s yeast
- 1-2 tsp dried herbs (sage, mixed, or any preferred herbs)
- 3 sheets frozen vegan pastry, or make your own pastry
Method
- In a food processor, combine the walnuts, tofu, onion, and soy sauce. Mix until well combined.
- Add the rolled oats, breadcrumbs, vegetable stock powder, brewer’s yeast, and dried herbs to the food processor. Blend again to incorporate all ingredients.
- Cut each pastry sheet in half, then spoon a layer of the tofu mixture down the middle of each sheet.
- Roll up the pastry sheets and seal the edges.
- Cut each roll into 2 or 4 pieces, depending on your desired size.
- Place the rolls on a baking tray lined with baking paper. Prick the tops with a fork, brush with water or soy milk, and sprinkle with sesame seeds.
- Bake at 180-200°C (356-392°F) for about 20-30 minutes, or until nicely browned.
