Enjoy these Banana Oat Breakfast Muffins as a delicious and nutritious on-the-go breakfast or snack!
Ingredients
- 2 tbsp water
- 1.5 tsp baking powder
- 1 tsp oil
- 1/3 cup oil
- Just under 1/2 cup maple syrup
- 1 cup ripe mashed banana (about 3)
- 1/4 cup milk
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 ¾ cups white flour
- ⅓ cups quick oats
- ⅝ cups raisins
Method
- Preheat your oven to 350°F (180°C) and grease or line a 12-cup muffin tin with paper liners.
- In a small bowl, mix together 2 tbsp water, 1.5 tsp baking powder, and 1 tsp oil. Set aside.
- In a separate bowl, mix together 1/3 cup oil and just under 1/2 cup maple syrup. Add the water-baking powder-oil mixture to this and mix well.
- In another bowl, mix together mashed banana, 1/4 cup milk, 1 tsp baking soda, 1 tsp vanilla extract, 1/2 tsp salt, and 1/2 tsp cinnamon. Add this to the oil-maple syrup mixture and mix well.
- Gradually add 1 ¾ cups white flour, ⅓ cups quick oats, and ⅝ cups raisins to the wet mixture, stirring gently until just combined.
- Divide the batter evenly among the 12 muffin cups.
- Bake for 23-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
