Nutburgers

These tasty Nutburgers can be enjoyed hot or cold, and are freezer-friendly for convenient storage.


Ingredients

  • 2 onions, finely chopped
  • 1/2 cup grated vegetable (carrot or potato)
  • 2 tbsp soy sauce
  • 1 tsp dried herbs (such as oregano or basil)
  • 1/2 cup cooked rice (or 1 1/2 cups rolled oats)
  • 400g (1 large block) tofu
  • 4 or 5 tsp tomato paste
  • 3 cups roasted blended nuts
  • 2 tsp vegetable stock powder (optional)

Method

  1. Preheat the oven to 250°C (482°F).
  2. In a large pan, fry the chopped onions in a little water or oil until softened.
  3. In a large mixing bowl, combine the cooked onions with the grated vegetable, soy sauce, dried herbs, cooked rice or rolled oats, tofu, tomato paste, roasted blended nuts, and vegetable stock powder (if using). Mix thoroughly.
  4. Form the mixture into patties and place them on a greased baking tray.
  5. Bake for about 45 minutes or until nicely browned.
