These Poppy Seed and Onion Crackers make around 50 crackers. Store them in an airtight container, where they will last for up to a week. They are perfect for serving at a vegan high tea or as a tasty snack.
Ingredients
- 200ml oil
- 4 tsp black onion seeds OR 4 Tbsp dried onion pieces
- 4 tsp poppy seeds
- 290 ml water
- 2 tsp fine salt
- 600g plain flour
- 2 tsp caster sugar
- 2 tsp baking powder
Method
- In a large jug or bowl, whisk together the oil and water.
- In another large bowl, combine the flour, salt, sugar, baking powder, black onion seeds (or dried onion pieces), and poppy seeds. Pour in the liquid mixture and mix until a dough forms.
- Turn the dough out onto a floured surface and knead until smooth. Wrap in cling film and rest overnight, or continue if preferred.
- Preheat the oven to 200°C (392°F) and line 2 large baking trays with baking paper.
- On a lightly floured surface, roll out the dough to 3mm thick.
- Cut into 4cm rounds using a drinking glass or cookie cutter. Brush off any excess flour.
- Transfer the rounds to the prepared baking trays and bake for 8-10 minutes, until golden brown. Keep a close eye on them, as they can quickly burn.
