These Poppy Seed and Onion Crackers make around 50 crackers. Store them in an airtight container, where they will last for up to a week. They are perfect for serving at a vegan high tea or as a tasty snack.

Ingredients

  • 200ml oil
  • 4 tsp black onion seeds OR 4 Tbsp dried onion pieces
  • 4 tsp poppy seeds
  • 290 ml water
  • 2 tsp fine salt
  • 600g plain flour
  • 2 tsp caster sugar
  • 2 tsp baking powder

Method

  1. In a large jug or bowl, whisk together the oil and water.
  2. In another large bowl, combine the flour, salt, sugar, baking powder, black onion seeds (or dried onion pieces), and poppy seeds. Pour in the liquid mixture and mix until a dough forms.
  3. Turn the dough out onto a floured surface and knead until smooth. Wrap in cling film and rest overnight, or continue if preferred.
  4. Preheat the oven to 200°C (392°F) and line 2 large baking trays with baking paper.
  5. On a lightly floured surface, roll out the dough to 3mm thick.
  6. Cut into 4cm rounds using a drinking glass or cookie cutter. Brush off any excess flour.
  7. Transfer the rounds to the prepared baking trays and bake for 8-10 minutes, until golden brown. Keep a close eye on them, as they can quickly burn.
