Ingredients
- 3 potatoes, grated
- 1 onion, grated
- 1/2 cup flour
- 1-2 green/spring onions, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp baking powder
Method
- In a large bowl, mix together grated potatoes, grated onion, flour, chopped green/spring onions, minced garlic, salt, pepper, and baking powder until well combined. The mixture should be wet.
- Heat a non-stick frying pan over medium heat and add a small amount of oil.
- Scoop a portion of the potato mixture and form it into a thin patty. Place the patty onto the hot pan.
- Fry each side of the potato pancake for about 3-4 minutes, or until golden brown and crispy.
- Place the cooked potato pancakes on a paper towel-lined plate to drain any excess oil.
- Serve immediately, or let them cool and freeze for later use.
