Potato Pancakes

To make a double batch for freezing, simply double the ingredients and follow the same instructions. Enjoy these delicious potato pancakes as a snack or side dish!


Ingredients

  • 3 potatoes, grated
  • 1 onion, grated
  • 1/2 cup flour
  • 1-2 green/spring onions, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp baking powder

Method

  1. In a large bowl, mix together grated potatoes, grated onion, flour, chopped green/spring onions, minced garlic, salt, pepper, and baking powder until well combined. The mixture should be wet.
  2. Heat a non-stick frying pan over medium heat and add a small amount of oil.
  3. Scoop a portion of the potato mixture and form it into a thin patty. Place the patty onto the hot pan.
  4. Fry each side of the potato pancake for about 3-4 minutes, or until golden brown and crispy.
  5. Place the cooked potato pancakes on a paper towel-lined plate to drain any excess oil.
  6. Serve immediately, or let them cool and freeze for later use.
