Enjoy these (refined) sugar-free cookie bites as a healthy and delicious snack! Requires food processor
Ingredients
- 1/2 cup oats
- 1 cup cashews (swap portions with oats if low on cashews)
- 6 tbsp flour
- 1 tsp flaxseed, ground up if possible
- 4 tbsp protein powder (optional)
- 1/3 tsp salt, just under
- 2 tsp vanilla
- 3.5 tbsp maple syrup
- 2 tbsp oil (optional)
- 3-4 tsp chocolate chips
Method
- In a food processor, combine oats, cashews, flour, ground flaxseed, protein powder (if using), and salt. Blend until you have a fine meal-like consistency.
- Add vanilla, maple syrup, and oil (if using) to the food processor. Blend until the mixture comes together and forms a dough.
- Add chocolate chips to the dough and pulse a few times to incorporate the chocolate chips.
- Scoop out small portions of the dough and roll them into balls using your hands. Place the cookie bites on a tray or plate.
- Refrigerate the cookie bites for at least 30 minutes to help them firm up. Store them in an airtight container in the refrigerator.
